What an amazing combination.  The creaminess of the avocado combined with the crispy toast creates a perfect breakfast, lunch, snack, appetizer and hey why not lets add dinner into the mix.  And when you have whole wheat french bread left over (or any bread for that matter) this is a perfect way to revamp that day old bread! And its super easy.


I recently discovered cilantro.  The best. discovery. ever. made.  It’s wonderful.  The fresh, earthy aroma boosts any dish.  However, it does something special when avocado is involved with a squirt of lemon. The creamy avocado combined with the sour lemon and fresh cilantro balance each other out perfectly in this dish.  Mmmm.  Let make it!


  • 3 ripe avocados
  • 1/2 a lemon
  • 1/4 cup of chopped fresh cilantro
  • 1 clove of garlic, minced
  • French bread (or any type of fresh preferably whole wheat bread)
  • Extra Virgin Olive Oil
  • Cherry Tomatoes


  1. Peel the avocados and remove the seed.  Mash them in a bowl with a fork.
  2. Add the juice of half a lemon along with the cilantro and garlic
  3. Add a sprinkle of salt and pepper
  4. Heat a frying pan on the stove to medium with a light coating of olive oil (a little more than a teaspoon)
  5. Add the sliced bread and cook for 5 minutes, then flip and cook the other side for 5 minutes
  6. Remove from frying pan and top with avocado mixture, cherry tomatoes and a sprig of cilantro


  • Nutritionally this is a powerhouse.  Avocados, a superfood, provide us with essential nutrients such as fiber, vitamin E, potassium and folic acid.  They act as a nutrient booster allowing us to digest beta-caroteen, lutein and other vitamins eaten with avocado.  Also, the healthy fats within avocados fill us up and keep us feeling full so we don’t feel the need to snack throughout the day.
